How to Make Mexican Sweet Potatoes
To give them a burnt flavour, these Mexican sweet potatoes are roasted after being mixed with a special spice blend.

I love sweet potatoes, and there are so many different ways to make them, like smoked sweet potatoes, sweet potato black bean tacos, and sweet potato wraps. Even though sweet potatoes are frequently used as a main course, this dish is actually the ideal accompaniment to any meal you’re craving.
Why I love this recipe

- Versatile: It complements a variety of dishes, including enchiladas with carne, carne asada street tacos, and smoked chicken breast.
Ingredients
- 1½ pounds of sweet potatoes, cut into cubes about ½ inch
- 3 tablespoon olive oil
- 2 tablespoon fresh cilantro, chopped
- 1Â lime, juiced
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- ¼ teaspoon black pepper
- Sweet potatoes can be sliced into wedges or discs, but I prefer to cut them into cubes. Another option is to use russet potatoes.
- Olive Oil – Adds some necessary fat and helps coat the spice mixture to the sweet potatoes. You can use a flavorless oil like vegetable or canola oil as well.
- Spice Mixture: Store-bought taco or fajita seasoning is fine, but I prefer to create my own because it uses spices I always keep in the cupboard.
- Lime/Cilantro: Gives the food a little acidity and freshness.

Steps to prepare
- Preheat the oven to 425°F. In a medium bowl, combine the sweet potatoes, olive oil, cumin, paprika, garlic powder, chilli powder, salt, and black pepper. Shake to mix everything together.
- Spread the sweet potatoes evenly across a baking sheet lined with parchment paper. Bake, tossing halfway through, 20 minutes.
- Take out of the oven and mix in the cilantro and lime juice.
Variations
You can up the ante by adding additional components, just like in any recipe. Among the variants are:
- Heat: There isn’t much heat in these Mexican sweet potatoes. For a bit more heat, you can add crushed red pepper flakes or cayenne pepper. Simply work in increments of ¼ teaspoon.
- Sweet – Mix in a tablespoon of brown sugar if you like a spicy/sweet flavor combo.
- Since cheese improves everything, let’s face it. With two minutes remaining, add 1 cup of pepper jack cheese, allowing it to melt into the sweet potatoes.
- Add the olive oil and spices to the sweet potatoes and toss. Spread evenly on a baking sheet and bake for 20 minutes at 425°F.
- Top with cilantro and lime juice, then serve.
